Ok, so as promised I have the perfect banana bread recipe for you today.  If you’re following my $100/month grocery challenge I talked about how I made a quick banana bread to use up the ripened bananas that were going to go to waste.  This recipe was so easy to come together and my favorite part is that it only uses 1 bowl.  The less dishes to wash the better.

You can add walnuts or even chocolate chips if you wanted to make this even better but we love it just the way it is.  It’s a great way to use up those brown bananas.  Juliana took one bite and declared it even better then chocolate cake.  And we all know how much that kid loves cake.  We ate some for breakfast and then I sliced it all up and cut the 1 inch slices into squares perfect for little fingers and packaged them up for the kids to take to school for snack this week.

Here’s what you need:

2 very ripe bananas

1/3 cup unsweetened applesauce

1/2 cup sugar

1 egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

pinch of salt

1 1/2 cups flour

Here’s what you do:

Preheat oven to 350 degrees.  Grease a 4×8 inch loaf pan.  In a big bowl mash the ripe bananas with a fork until smooth.  Stir in applesauce.  Mix in the baking soda and salt.  Stir in the sugar, beaten egg and vanilla.  When all combined, mix in the flour.  Pour batter into loaf pan.  Bake for 1 hour.  Remove from pan to cool and then slice and serve!

If you want to add mini chocolate chips or nuts, do it at the end when all the other ingredients are already mixed together.  We didn’t have any on hand, and the idea was to use up what we had and not run to the store for more ingredients.  And I promise, like I said before, this recipe does not even need any extras.  This banana bread is seriously so yummy we can’t even wait for our bananas to turn brown again.

 I want to share a really easy breakfast tip with you.   I have zero desire to start scrambling eggs in the morning before pre-school drop off.  It’s hard enough trying to get everyone dressed and out the door there’s just no way I want to start making a mess on the stove.   One weekend morning recently I made these simple egg + cheese burritos for the kids to eat for breakfast and they were a total hit.  What made them even better was that they are easy for little hands to hold.  And unlike breakfast sandwiches, if they are rolled nice and tight, the fillings don’t come spilling out all over the place.

The next weekend Mini requested the burritos again and I decided to make a big batch so that I could freeze them for an easy weekday breakfast.

What you need

8 eggs

6 tortillas

Shredded cheese (I used a half cup)

Saran wrap

Aluminum Foil

Instructions

Scramble the eggs.  At the very end of the cooking process, toss in the shredded cheese and let it get all melty onto the eggs.  In the meantime, lay out the tortillas on your counter top.  Once the eggs have cooled for a second, scoop an even amount onto the center of each tortilla.  (See photo).  In order to roll the tortillas tight you need to tuck in the sides and roll from the bottom to the top.  If you can’t figure out how I am sure there is an instructional youtube video to help.  If not, let me know and I’ll make one, haha.  Once they are rolled, place them seam side down while you of course eat one.

Wrap each burrito first in saran wrap and then in a piece of aluminum foil.  Toss them all in the freezer until you are ready to eat them.  When you want one, take it out of the aluminum foil.  Place the burrito in the saran wrap into the microwave.  Microwave the burrito on 50% for 1 minute.  Flip it over and do it again, 50% for 1 more minute.  Then unwrap it and enjoy!

My favorite part of this is not having to wash a pan just because we wanted breakfast burritos.   I also add different things in mine so feel free to get crazy.  We have tried diced ham, pepper + onions, sauteed spinach, chopped sausage and different cheeses.  Let me know what your favorite combo is!
